Black Bean & Corn Salsa

I’m kind of obsessed with salsa.  I love to make fresh salsa, because not only is it so yummy, but it really only takes a few minutes to whip up a batch.  A very favorite recipe of mine is Black Bean & Corn Salsa, which incorporates those delicious tomatoes with lime, cilantro, black beans, corn, avocado, and red onion, for the the BEST salsa ever.  Let’s just say I can eat a lot of it.  ☺

The combination of flavors and freshness is fabulous, but I also love it because it’s healthy! It’s a no-guilt snack when paired with baked tortilla chips. I got this recipe from a friend almost 10 years ago, and although I’ve come across similar recipes, I haven’t had one I like better than this one.

This is a perfect salsa to serve while you’re watching a football game, at a party or gathering, or just for an after school snack. I also serve it as a topping or garnish on tacos, tostadas, fajitas, and any Mexican dish.  You just can’t go wrong!

The beauty of this recipe is that it’s totally customizable.  If you to add or reduce an ingredient you either love or don’t love, you can! It’s easy to make it the way you like it.  I always add extra cilantro, because it’s my favorite thing ever.

Black Bean & Corn Salsa
Recipe Type: Dip/Salsa

Serves: 6
Ingredients
  • 1-15 oz. can black beans, rinsed and drained
  • 1 1/2 c. frozen corn, thawed (you can use also use fresh corn)
  • 2 large tomatoes, seeded and chopped
  • 1 large avocado, peeled and chopped
  • 1 purple onion, chopped
  • 1/4 c. chopped cilantro
  • 3-4 T. fresh lime juice
  • 2 T. olive oil
  • 1 T. red wine vinegar
  • 1 tsp. salt
  • 1 tsp. pepper
Instructions
  1. Combine ingredients in a bowl, cover and chill. Garnish with avocado and fresh cilantro. Serve with tortilla chips!
