Halloween night is one of the most fun nights of the year, and one our whole family looks forward to. Costumes, trick-or-treating, friends, and food!! I love to make something fun for Halloween dinner, but it has to be pretty quick and easy. Usually the day includes dashing from one school classroom to another, costume parades, and other Halloween activities, so it doesn’t leave a whole lot of prep time. This year I was on the hunt for some fun, spooky & easy Halloween dinner ideas, and I wanted to pass them on to you!

We are huge grilled cheese fans at our house, and I love how simple these are to make! They prove that you don’t have to spend a lot of time to create something fun!
I’ve seen these around quite a bit, and I never get tired of seeing them–they’re adorable, and super easy!
We love quesadillas at our house (we call them cheese “tillies”, which goes back to my childhood, and my brother who couldn’t pronounce “quesadillas”!), and eat them often. Cutting out a jack-o-lantern face and making pumpkins out of them is a fantastic idea, and would take just a few minutes.
I first saw just the ghost mashed potatoes a few years ago, and I love how she added them to make this fun and “spooky” shepherd’s pie! You could even make the mashed potatoes ahead of time if you wanted to save on time.
Can we say a-dor-able??? I LOVE this idea! I think you could use regular potatoes too–I’m totally trying this!
