- 1 10 oz. bag frozen corn, or 2 c. fresh corn
- 2 large tomatoes, chopped
- 2 avocado, chopped
- 1 purple onion, chopped
- 1/4 cup cilantro, chopped
- 3-4 tablespoons lime juice
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar (or white wine vinegar)
- 1 teaspoon salt
- 1 teaspoon pepper
