Cowboy Caviar Salsa

Cowboy Caviar is a delightful and fresh, full of tomatoes, black beans, corn, and avocado. Serve with tortilla chips! Easy appetizer recipe.


  • 2 15 oz. cans black beans, rinsed and drained
  • 1 10 oz. bag frozen corn, or 2 c. fresh corn
  • 2 large tomatoes, chopped
  • 2 avocado, chopped
  • 1 purple onion, chopped
  • 1/4 cup cilantro, chopped
  • 3-4 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar (or white wine vinegar)
  • 1 teaspoon salt
  • 1 teaspoon pepper


  • Combine all the ingredients in a large bowl, cover and chill. Serve with tortilla chips.
