Salted Tortilla Chips

Cinnamon & Sugar Tortilla Chips

Instructions

Oven Method

  • Line a cookie sheet with parchment paper or foil. After cutting tortillas into heart shapes, lay them out on the cookie sheet. Brush or spray with olive oil or avocado oil. Sprinkle with either salt or with cinnamon & sugar, depending on which type you're making.
Bake in an oven preheated to 375 degrees for about 11-13 minutes, or until the chips are a light golden brown.

Fry Method

  • Pour enough oil into a medium fry pan or cast-iron skillet to fill it to a depth of about 1/8-1/4 of an inch. (I'll use less oil if I'm not planning to make as many chips, and a bit more if I'm making a bunch.)
Heat the oil on medium-high heat to about 350 degrees (an infrared thermometer is great for this!). You can test it by placing a small tortilla in the oil--if it starts to sizzle, you know it's about right. If it sinks in the oil, it's not hot enough, and if it browns very quickly, you know it's too hot.
Using tongs, place the heart-shaped tortillas into the oil, turning them over once as each side browns. Remove from the oil when both sides are golden brown.
For the savory option, place on a plate covered with a paper towel for draining excess oil, and immediately add a sprinkle of salt. The other option is to make a batch of cinnamon & sugar in a shallow pie plate, and immediately roll the hot chips in the mixture.

Cinnamon & Sugar

  • The best ration for cinnamon & sugar is 1:4. Mix the two together in a shallow dish or pie plate, and it's perfect for rolling your cinnamon & sugar chips!
