Fast & Easy Individual Pizzas

I’m going to tell you a secret.  Don’t tell ANYONE.

I don’t like making dinner.

It might have to do with the fact that it falls at the worst possible time of day,  Kids are tired, I’m tired, everyone’s hungry, and as Murphy’s Law states, as soon as I get in the kitchen, everyone needs something at that very moment. If school is in session, kids are doing homework, practicing music, and odds are one of the kids (or more) will have a lesson or practice.  In the summer, we’re out and about during the day, and somehow, we are just as busy. So…I’m a big fan of fast, easy, and yummy meals that require minimal time in the kitchen but have maximum flavor.  These fast & easy individual pizzas are one of my family’s most favorite meals, and can be on the table in less 20 minutes!

Another thing I love about these pizzas is that they are totally personalized–everyone gets their pizza just the way they want it!  No arguing about pepperoni or cheese or ham & pineapple…just lots of happy eaters.  My kids get so excited about DIY Pizza Night (which is what we call it), because they get to make their own pizza! It’s a great way to get the whole family in the kitchen together, and the kids involved.

What makes them so easy? It all starts with Pillsbury Grands Homestyle Biscuits! (Or the generic brand–I’ve used both.) I usually flatten them with my hand, to make them on the smaller side, but if you want them a little larger, you can use a rolling pin.  Add pizza sauce (you can find this in the section with the pre-made pizza crusts) mozzarella cheese, and all of your favorite toppings, then pop them in the oven for about 15 minutes or until lightly browned. That’s it!!  Be ready for totally yummy pizza!!
