{chocolate oreo cookies}
 My son came home from a chocolate tasting activity at the library this week and told me that he learned eating chocolate on a regular basis is good for you. Well, I’m not really sure about that exactly, but I decided to go with it. ☺ So, when my kids were asking to make cookies today, chocolate it was, and for good measure (might as well be really healthy, lol), I threw a few Oreos in! The result was the most delicious Chocolate Oreo Cookies..full of crunch from the cookie, and an added richness from the filling. My kids couldn’t get enough of them–they were a hit!
I wanted to have larger chunks of Oreos to bite into–not crushed–so I put then in a plastic bag, gave it few whacks with my rolling pin, and called it good. Once the batter was all combined and ready to go, I gently folded in the Oreo pieces so that the cookies wouldn’t get any smaller, and so the filling would stay intact.
Cookies within a cookie?? Divine.
Add some ice cold milk…perfection.
- 1 3/4 c. flour
- 1 1/4 c. cocoa powder
- 1 c. white sugar
- 3/4 c. brown sugar
- 2 tsp. baking soda
- 1 c. butter
- 2 eggs
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1 package Oreo cookies
- Preheat oven to 350 degrees.
- In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy. Add eggs one at a time, beating well with each addition. Add the salt and vanilla.
- In another bowl, combine the flour, cocoa and baking soda, then gradually add to the creamed mixture. Place the Oreo Cookies in a large plastic storage bag, remove all the air, and seal. Use a rolling pin to crush the cookies to the size that you want. (I made them bite-sized chunks.) Fold in the Oreo Cookies to the dough, Drop by rounded teaspoonfuls onto a cookie sheet.
- Bake for 8 minutes until fluffy, but still soft. Do not overbake! Allow cookies to cool on a baking sheet for 5 minutes before removing to a wire rack to cool completely.
